Into the Woods
FLIGHT FEE $16.00
Venturing into the woods can be a bit spooky, especially in October. Fortunately, we're only here to explore how different uses of oak can change a whiskey's flavor. Toast it, char it, finish with it—apparently trees have a lot to say.
Maker's Mark 46 French Oak Finished Bourbon, 94 Proof Loretto, KY
Toasty French oak, caramel, and warm baking spice lead into rich vanilla, cinnamon, and deeper wood sweetness. The wheated bourbon keeps things soft and rounded, with a velvety finish that lets the oak and spice linger without becoming harsh. Maker's finishes this with ten seared French oak staves.
Yellowstone Toasted Straight Bourbon, 100 Proof Lebanon, KY
Toasted caramel and vanilla meet cinnamon and fall spice on the nose. Walnut and toffee bring a darker, nuttier character, joined by black tea and white pepper before cocoa, tobacco, and crisp oak take over on the finish. Five different toasted stave profiles are used to build the final flavor.
Bib & Tucker Double Char 6y Bourbon, 88 Proof Columbia, KY
Sweet smoke and sugar maple introduce a richer side of oak, followed by vanilla, dulce de leche, and toasted cinnamon. A savory char character runs underneath the sweetness, giving way to a smooth, smoky finish that clearly shows the influence of its second heavily charred barrel.
Boo-rbon Season
FLIGHT FEE $16.25
We make no apologies for the pun—or the pour. Three scary-good New York bourbons showcasing the sweeter side of Empire State whiskey.
Great Jones Small Batch Bourbon, 100 Proof Manhattan, NY
This whiskey showcases grains grown in New York's Black Dirt region, lending a distinct character to the spirit. The nose offers dry corn, light vanilla, and subtle hints of vegetable and white pepper. On the palate, a silky, toasty texture carries flavors of sweet vanilla, buttered toast, and gentle pepper spice. The smooth, creamy finish leaves lingering vanilla sweetness and a warm, peppery kick.
Widow Jane's Baby Bourbon, 91 Proof Brooklyn, NY
Made using Widow Jane's proprietary heirloom Baby Jane corn, this bourbon highlights the grain at the heart of the brand's New York whiskey program. Honey, summer fruits, and a touch of caramel lead into apricot, peach, and allspice, followed by a fuller finish of orchard fruit, oak, and fresh pastry.
Finger Lakes Distilling McKenzie Straight Bourbon, 91 Proof Burdett, NY
Aromas of vanilla, honeyed biscuits, toasted graham cracker, and buttered popcorn greet the nose, offering a warm and inviting introduction. On the palate, vanilla, caramel, oak, and a signature McKenzie spice create a balanced, flavorful experience. The long, spicy finish lingers with hints of citrus, fruit, and oak, leaving a lasting impression.
